Ingredients

  • 2 tablespoons of butter
  • 1/2 cup of diced potatoes
  • 1/4 cup of diced onion
  • 1/4 cup of diced bell pepper
  • 1/4 cup of chopped spinach
  • 1/4 cup of diced tomatoes
  • 4 eggs
  • 1/2 cup of shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste

Directions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the diced potatoes, onion, bell pepper, spinach, and tomatoes to the skillet. Cook until the vegetables are softened, about 5 minutes.
  3. Whisk together the eggs in a separate bowl. Pour the eggs into the skillet with the vegetables and stir to combine.
  4. Sprinkle the cheese over the top of the omelet and season with salt and pepper. Cook until the eggs are set, about 5 minutes.
  5. Carefully fold the omelet in half and cook for an additional 2-3 minutes until the cheese is melted.
  6. Serve warm.
