Ingredients

Directions

  1. In a large mixing bowl, combine the whole wheat flour, wheat bran, salt, and yeast.
  2. Add warm water to the bowl and stir until the ingredients are well mixed and a sticky dough forms.
  3. Cover the bowl with plastic wrap and let it sit at room temperature for about 18-24 hours to allow the dough to ferment and rise.
  4. After the fermentation period, preheat your oven to 450°F (230°C) and place a covered cast-iron pot or Dutch oven inside to heat up.
  5. While the oven is preheating, transfer the risen dough onto a floured surface.
  6. Shape the dough into a round ball by folding the edges towards the center, creating tension on the dough's surface.
  7. Carefully remove the hot pot from the oven and place the dough inside. Be cautious as the pot will be very hot.
  8. Cover the pot with the lid and bake for 30 minutes.
  9. Remove the lid and bake for an additional 15-20 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  10. Once baked, carefully remove the bread from the pot and let it cool completely on a wire rack before slicing.
