Ingredients

  • 2 pounds flat iron steak
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup red wine
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh parsley

Directions

  1. In a small bowl, combine the olive oil, garlic, oregano, thyme, salt, and pepper. Mix well.
  2. Rub the mixture all over the steak and place in a shallow dish. Cover and refrigerate for at least 1 hour.
  3. Heat a large skillet over medium-high heat and add the steak. Cook for 5 minutes per side, or until desired doneness.
  4. Remove the steak from the skillet and set aside on a plate.
  5. Add the red wine to the skillet and bring to a simmer. Simmer for 3-4 minutes, or until the sauce has reduced by half.
  6. Stir in the butter, parsley, and any juices from the steak plate. Cook for 1 minute, or until the sauce is thick and creamy.
  7. Return the steak to the skillet and spoon the sauce over the steak. Simmer for 1-2 minutes, or until the steak is heated through.
