Spice up your appetizer game with these delicious armadillo eggs. These fun and easy-to-make snacks are perfect for parties or game day. Jalapeno peppers stuffed with a mixture of cheese, bacon, and sausage, then breaded and deep-fried to perfection. Serve them with a side of ranch or spicy aioli for dipping and watch them disappear quickly.

Ingredients

  • 12 jalapeno peppers
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup cooked and crumbled sausage
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups bread crumbs
  • Oil for frying

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Cut each jalapeno pepper in half lengthwise and remove the seeds and membranes.
  3. In a mixing bowl, combine the cream cheese, cheddar cheese, bacon, and sausage. Stir until well blended.
  4. Fill each jalapeno half with the cheese and meat mixture, then press the halves back together.
  5. In three separate bowls, place the flour, beaten eggs, and bread crumbs.
  6. Dip each stuffed jalapeno first in the flour, then in the beaten eggs, and finally in the bread crumbs, ensuring they are well coated.
  7. Heat oil in a deep fryer or a large pot to 375°F (190°C).
  8. Carefully place the coated jalapenos in the hot oil and fry for 2-3 minutes until golden brown. Do not overcrowd the pot; fry in batches if necessary.
  9. Remove the armadillo eggs from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil.
  10. For an extra crispy texture, you can bake the armadillo eggs in the preheated oven for an additional 10-15 minutes.
  11. Serve the armadillo eggs hot with ranch dressing or spicy aioli for dipping.
  12. Enjoy!
