Ingredients

  • 1 pound tortellini
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen corn
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Directions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.
  2. In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.
  3. Add the dried thyme, dried oregano, and red pepper flakes to the pot. Stir to combine and toast the spices for a minute.
  4. Pour in the chicken broth and bring to a simmer. Add the tortellini and cook according to package instructions, usually around 7-9 minutes.
  5. Stir in the heavy cream and frozen corn. Cook for an additional 5 minutes, or until heated through.
  6. Season with salt and pepper to taste. Be careful with the salt as the bacon and chicken broth are already salty.
  7. Serve the chowder hot, garnished with crispy bacon and chopped fresh parsley. Enjoy!
