Ingredients

  • 2 cups strawberries, hulled and sliced
  • 1/4 cup sugar
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2/3 cup milk
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Directions

  1. In a medium bowl, combine sliced strawberries and 1/4 cup of sugar. Stir well and set aside to macerate.
  2. Preheat the oven to 425°F (220°C).
  3. In a large bowl, whisk together the flour, 1/4 cup of sugar, baking powder, and salt.
  4. Add the cold cubed butter to the flour mixture. Using a pastry cutter or your hands, cut the butter into the flour until it resembles coarse crumbs.
  5. Pour in the milk and stir until just combined. Be careful not to overmix.
  6. Transfer the dough onto a floured surface and gently knead it a few times until it comes together.
  7. Roll out the dough to a 1/2-inch thickness. Use a biscuit cutter to cut out rounds and place them on a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until golden brown.
  9. While the biscuits are baking, beat the heavy cream, powdered sugar, and vanilla extract in a chilled bowl until stiff peaks form.
  10. Remove the biscuits from the oven and allow them to cool slightly.
  11. To assemble the shortcakes, split the biscuits in half. Place the bottom half on a plate, spoon some macerated strawberries onto it, and top with a dollop of whipped cream. Place the other half of the biscuit on top.
  12. Garnish with additional sliced strawberries if desired.
  13. Serve immediately and enjoy!
