  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Sour cream and salsa for serving

Directions

  1. In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and jalapeno pepper. Cook until the vegetables are softened, about 5 minutes.
  2. Add the ground turkey to the skillet and cook until browned, breaking it up into crumbles with a spoon.
  3. Stir in the cumin, chili powder, and paprika. Cook for another 2 minutes to toast the spices.
  4. Add the black beans and corn to the skillet. Stir to combine and season with salt and pepper to taste. Cook for another 5 minutes until heated through.
  5. Warm the tortillas in a dry skillet or microwave for a few seconds.
  6. To assemble the wraps, place a tortilla on a clean surface. Spoon a quarter of the turkey and bean mixture onto the center of the tortilla. Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, and chopped fresh cilantro.
  7. Fold in the sides of the tortilla and roll it up tightly, tucking in the filling as you go. Repeat with the remaining tortillas and filling.
