Ingredients
- 8 ounces fusilli pasta
- 1 cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Directions
- Cook the fusilli pasta according to package instructions. Drain and rinse with cold water to cool.
- In a large mixing bowl, combine the cooled pasta, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, parsley, and basil.
