This homemade chicken rotini soup is a comforting and hearty dish that is perfect for chilly days. Ingredients
- 1 pound boneless, skinless chicken breasts, cut into small pieces
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 cups rotini pasta
- Fresh parsley, chopped for garnish
Directions
- Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned, about 5 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Return the chicken to the pot and add the chicken broth, diced tomatoes, dried thyme, dried oregano, bay leaf, salt, and pepper. Bring the soup to a boil and then reduce heat to low. Simmer for 20 minutes.
- While the soup is simmering, cook the rotini pasta according to the package instructions. Drain and set aside.
- After 20 minutes, remove the bay leaf from the soup. Add the cooked rotini pasta and let it simmer for 5 more minutes.
- Serve the chicken rotini soup hot, garnished with freshly chopped parsley.
