Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups rotini pasta
  • Fresh parsley, chopped for garnish

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned, about 5 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Return the chicken to the pot and add the chicken broth, diced tomatoes, dried thyme, dried oregano, bay leaf, salt, and pepper. Bring the soup to a boil and then reduce heat to low. Simmer for 20 minutes.
  4. While the soup is simmering, cook the rotini pasta according to the package instructions. Drain and set aside.
  5. After 20 minutes, remove the bay leaf from the soup. Add the cooked rotini pasta and let it simmer for 5 more minutes.
  6. Serve the chicken rotini soup hot, garnished with freshly chopped parsley.
