Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup cold unsalted butter, cubed
  • 6-8 tablespoons ice water
  • 4 large ripe bananas, sliced
  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, melted
  • 1 egg, beaten (for egg wash)

Directions

  1. In a large mixing bowl, combine the flour and salt. Add the cold cubed butter and using a pastry cutter or your hands, work the butter into the flour mixture until it resembles coarse crumbs.
  2. Add ice water, one tablespoon at a time, and mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a separate bowl, combine the sliced bananas, blueberries, granulated sugar, flour, cinnamon, salt, lemon juice, and melted butter. Mix gently to coat the fruit.
  5. Remove the chilled dough from the refrigerator and divide it into two equal pieces. On a lightly floured surface, roll out one piece of dough to fit the bottom of a 9-inch pie dish. Place the rolled dough into the dish and press it gently against the sides. Trim any excess dough.
  6. Pour the banana and blueberry filling into the prepared pie crust, spreading it evenly. Roll out the remaining dough and cut it into strips to create a lattice pattern on top of the filling. Press the edges of the crust together and crimp as desired.
  7. Brush the top crust with beaten egg wash to create a golden-brown finish.
  8. Place the pie on a baking sheet to catch any potential spills and bake in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Remove the pie from the oven and let it cool for at least 1 hour before serving. This allows the filling to set.
  10. Slice and serve the pie warm or at room temperature. You can also refrigerate the leftovers for up to 3 days. Enjoy!
