Ingredients

  • 500g boneless chicken, cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1 tablespoon ginger-garlic paste
  • 3 green chilies, slit
  • 1 sprig curry leaves
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon black pepper powder
  • 1 teaspoon garam masala powder
  • 1 cup coconut milk
  • 2 tablespoons coconut oil
  • Salt to taste
  • Fresh cilantro leaves, for garnish

Directions

  1. Heat coconut oil in a pan over medium heat. Add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and slit green chilies. Cook for a minute until the raw smell disappears.
  3. Add turmeric powder, red chili powder, coriander powder, and black pepper powder. Mix well.
  4. Add chicken pieces to the pan and cook until they are no longer pink. Stir occasionally to ensure even cooking.
  5. Add tomato puree and cook for 2-3 minutes until the oil separates from the masala.
  6. Add coconut milk and curry leaves. Bring the curry to a boil and then reduce the heat to low. Cover and simmer for 15-20 minutes until the flavors meld together.
  7. Check the seasoning and add salt if needed. Sprinkle garam masala powder and mix well.
  8. Garnish with fresh cilantro leaves and serve hot with steamed rice, roti, or naan bread.
