Ingredients
- 1 large sweet onion
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder

- 2 eggs
- 1 cup panko breadcrumbs
- 2 boneless, skinless chicken breasts, cooked and shredded

Directions
- Preheat the oven to 400°F (200°C).
- Slice off the top of the onion and remove the outer skin. Cut about 1/2 inch (1.25 cm) from the bottom of the onion so that it stands upright. Carefully make vertical cuts into the onion, starting from the top, leaving about 1/4 inch (0.6 cm) at the bottom uncut.
- In a shallow bowl, mix together the flour, paprika, garlic powder, salt, and black pepper. In another shallow bowl, beat the eggs. In a third shallow bowl, place the panko breadcrumbs.
- Dip the onion into the flour mixture, making sure to coat it well. Shake off any excess flour. Dip the onion into the beaten eggs, allowing any excess to drip off. Finally, dip the onion into the panko breadcrumbs, pressing the breadcrumbs onto the onion to coat it evenly.
