Ingredients

  • 1 large sweet onion
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs
  • 1 cup panko breadcrumbs
  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 1/4 cup chopped green onions, for garnish

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Slice off the top of the onion and remove the outer skin. Cut about 1/2 inch (1.25 cm) from the bottom of the onion so that it stands upright. Carefully make vertical cuts into the onion, starting from the top, leaving about 1/4 inch (0.6 cm) at the bottom uncut.
  3. In a shallow bowl, mix together the flour, paprika, garlic powder, salt, and black pepper. In another shallow bowl, beat the eggs. In a third shallow bowl, place the panko breadcrumbs.
  4. Dip the onion into the flour mixture, making sure to coat it well. Shake off any excess flour. Dip the onion into the beaten eggs, allowing any excess to drip off. Finally, dip the onion into the panko breadcrumbs, pressing the breadcrumbs onto the onion to coat it evenly.
  5. Place the coated onion in a baking dish and bake for 25-30 minutes, or until the onion is soft and the breadcrumbs are golden brown.
  6. Remove the onion from the oven and carefully fill the center with the cooked and shredded chicken. Top with the crumbled bacon and shredded cheddar cheese.
  7. Return the onion to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Remove the onion from the oven and let it cool for a few minutes. Drizzle the ranch dressing over the top of the onion and garnish with chopped green onions.
