Ingredients

Directions

  1. Place chicken breasts between two sheets of plastic wrap and pound with a meat mallet until thin.
  2. In a shallow dish, combine flour, salt, and black pepper. In another shallow dish, beat eggs.
  3. In a third shallow dish, mix breadcrumbs and grated Parmesan cheese.
  4. Dip each chicken breast into the flour mixture, shaking off any excess. Then dip into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken breasts in the breadcrumb mixture, pressing lightly to adhere.
  5. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
  6. Add the coated chicken breasts to the skillet and cook until golden and crispy, about 3-4 minutes per side. Remove the chicken from the skillet and set aside on a plate.
  7. In the same skillet, add the remaining 2 tablespoons of butter, chicken broth, and lemon juice. Stir and scrape the bottom of the skillet to loosen any browned bits.
  8. Simmer the sauce for 2-3 minutes until slightly thickened. Return the chicken breasts to the skillet and coat them with the sauce.
