  • 2 pounds chicken thighs, bone-in and skin-on
  • 1 tablespoon olive oil

  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Directions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the diced onion, sliced carrots, sliced celery, and minced garlic. Cook until the vegetables have softened, about 5 minutes.
