These Skillet Chicken Fajitas are a delicious and easy weeknight meal. Tender and flavorful chicken strips are cooked with bell peppers and onions in a flavorful spice blend. Serve them in warm tortillas with your favorite toppings for a satisfying and tasty dinner.

Ingredients

  • 1 pound boneless, skinless chicken breasts, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 8 flour tortillas
  • Optional Toppings: shredded cheese, sour cream, guacamole, salsa

Directions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add the chicken strips and cook for 5-6 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil.
  4. Add the sliced bell peppers and onion to the skillet and cook for 5-6 minutes until the vegetables are tender-crisp.
  5. Add the minced garlic, chili powder, cumin, paprika, cayenne pepper (if using), salt, and pepper to the skillet. Stir well to coat the vegetables with the spices.
  6. Return the cooked chicken to the skillet and toss with the vegetables until everything is well combined and heated through.
  7. Warm the flour tortillas in a dry skillet or in the microwave.
  8. Serve the chicken fajita mixture in the warm tortillas.
  9. Top with shredded cheese, sour cream, guacamole, salsa, or any other desired toppings.
