- 4 boneless, skinless chicken breasts

Directions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken with salt and pepper, and add to the skillet. Cook for about 5 minutes per side, or until cooked through.
- Remove the chicken from the skillet and set aside.
- Add the white wine, chicken broth, and Dijon mustard to the skillet. Simmer over medium heat for about 5 minutes, or until the sauce has reduced slightly.
- Add the butter to the skillet and stir until it is melted and the sauce is creamy.
- Return the chicken to the skillet and spoon the sauce over the chicken. Cook for an additional 3 minutes.
- Serve the chicken with the sauce spooned over the top.
