Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups fresh green beans, cut into 1-inch pieces
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1 cup canned tomatoes, diced
  • Salt and pepper to taste

Directions

  1. Heat oil in a large skillet over medium-high heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and green beans, stirring to coat with oil. Cook for 5 minutes, stirring occasionally.
  3. Add paprika, cumin, and cayenne pepper, stirring to combine. Cook for 1 minute.
  4. Add tomatoes and cook until tomatoes are softened and green beans are tender, about 5 minutes more.
