Ingredients

  • 2 pounds of stew beef
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of tomato paste
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried basil
  • 1 teaspoon of paprika
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 (15 ounce) can of diced tomatoes
  • 1 (15 ounce) can of beef broth
  • 2 cups of potatoes, diced
  • 2 cups of carrots, diced
  • 1 cup of celery, diced
  • 1 (15 ounce) can of green beans, drained

Directions

  1. In a large pot, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add the beef and cook until browned, about 4 minutes.
  3. Add the onion and garlic and cook for another 3 minutes.
  4. Stir in the tomato paste, oregano, thyme, basil, paprika, salt, and pepper.
  5. Add the diced tomatoes, beef broth, potatoes, carrots, and celery.
  6. Bring the stew to a boil, then reduce the heat to low and simmer for 30 minutes.
  7. Stir in the green beans and simmer for an additional 10 minutes.
  8. Serve hot.
