Ingredients
- 1 large beet, peeled and grated
- 1 large carrot, peeled and grated
- 1 large onion, chopped
- 1/4 cup vegetable oil
- 1/4 cup white vinegar
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped fresh dill
- 4 cups vegetable broth
- 4 tablespoons sour cream (optional)
Directions
- In a large saucepan, heat the vegetable oil over medium heat.
- Add the grated beets, carrots, and onions to the saucepan and cook for 5 minutes, stirring occasionally.
- Stir in the white vinegar, sugar, salt, and pepper.
- Add the dill and vegetable broth and bring to a boil.
- Reduce heat to low and simmer for 20 minutes.
- Ladle the soup into shooters and garnish with a dollop of sour cream, if desired.
- Serve immediately.
