Sweet and Sour Borscht Shooters

Ingredients

  • 1 large beet, peeled and grated
  • 1 large carrot, peeled and grated
  • 1 large onion, chopped
  • 1/4 cup vegetable oil
  • 1/4 cup white vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped fresh dill
  • 4 cups vegetable broth
  • 4 tablespoons sour cream (optional)

Directions

  1. In a large saucepan, heat the vegetable oil over medium heat.
  2. Add the grated beets, carrots, and onions to the saucepan and cook for 5 minutes, stirring occasionally.
  3. Stir in the white vinegar, sugar, salt, and pepper.
  4. Add the dill and vegetable broth and bring to a boil.
  5. Reduce heat to low and simmer for 20 minutes.
  6. Ladle the soup into shooters and garnish with a dollop of sour cream, if desired.
  7. Serve immediately.
