Ingredients

  • 1 can of cranberry beans, drained and rinsed

  • 1/4 cup of celery, diced
  • 1/4 cup of red pepper, diced

  • 2 tablespoons of white wine vinegar
  • 1 teaspoon of honey
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the cranberry beans, red onion, celery, red pepper, and dried cranberries.
  2. In a small bowl, whisk together the olive oil, white wine vinegar, honey, salt, and pepper.
