Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 pound skinless, boneless chicken breasts, cut into 1-inch cubes
  • 1 can (14 1/2 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (4 ounces) chopped green chilies

Directions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add onion and garlic; cook and stir until onion is tender.
  3. Stir in chili powder, cumin, oregano, salt and pepper; cook and stir for 1 minute.
  4. Add chicken; cook and stir until chicken is no longer pink.
  5. Stir in tomatoes, black beans and chilies. Bring to a boil; reduce heat. Simmer, uncovered, for 15 minutes or until chicken is cooked through and sauce is slightly thickened.
