Shrimp Linguine with Tomatoes

Ingredients

  • 1 pound of linguine
  • 1 tablespoon of olive oil
  • 1 pound of shrimp, peeled and deveined
  • 1 cup of chopped tomatoes
  • 1 teaspoon of garlic, minced
  • 1 teaspoon of crushed red pepper flakes
  • 1/4 cup of white wine
  • 1/4 cup of chopped parsley
  • Salt and pepper, to taste

Directions

  1. Bring a large pot of salted water to a boil.
  2. Add the linguine and cook until al dente, about 7 minutes.
  3. Drain the linguine and set aside.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Add the shrimp and cook until just pink, about 2 minutes per side.
  6. Add the tomatoes, garlic, and red pepper flakes and cook for another 2 minutes.
  7. Stir in the white wine and bring to a simmer.
  8. Add the cooked linguine to the skillet and toss to combine.
  9. Stir in the parsley and season with salt and pepper, to taste.
  10. Serve immediately.
