Ingredients
- 1 package graham crackers
- 1 stick butter, melted
- 2 cups sugar
- 2 tablespoons all-purpose flour
- 2 teaspoons baking powder
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 pint vanilla ice cream, softened
- Whipped cream, for garnish
Directions
- Preheat oven to 350 degrees F.
- In a medium bowl, mix together the graham crackers and melted butter until well combined.
- Press the graham cracker mixture into the bottom of a 9-inch round cake pan.
- In a large bowl, whisk together the sugar, flour, baking powder, eggs, vanilla extract and salt until combined.
- Pour the batter over the graham cracker crust, and spread evenly.
- Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven, and let cool completely.
- Spread the softened ice cream over the cooled cake.
- Cover and freeze for at least 4 hours.
- Garnish with whipped cream, and serve.
