Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 4 tablespoons butter, cut into cubes
  • 1/3 cup dry white wine
  • 1/3 cup cold water
  • 4 tablespoons butter, melted
  • 1/2 cup granulated sugar, for dusting

Directions

  1. In a medium bowl, whisk together the flour, sugar and salt.
  2. Add the butter cubes to the flour mixture and rub with your fingertips until the mixture resembles sand.
  3. Add the wine and water and mix together until a dough forms.
  4. Turn the dough out onto a lightly floured work surface and knead until it is smooth and elastic, about 5 minutes.
  5. Wrap the dough in plastic wrap and let rest for 30 minutes.
  6. Divide the dough into 8 pieces and roll each piece into a thin circle, about 1/8 inch thick.
  7. Brush each circle with melted butter and sprinkle with sugar.
  8. Carefully wrap the circles around a cannoli tube and press to seal the edges.
  9. Fry the cannoli shells in hot oil until golden brown, about 2 minutes.
  10. Drain on paper towels and let cool before serving.
