Ingredients

  • 2 tablespoons olive oil

  • 1 green bell pepper, diced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon kosher salt
  • 2 cups beef broth
  • 1 pound ground beef
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (4-ounce) can diced green chiles

Directions

  1. Heat the olive oil in a large Dutch oven over medium heat. Add the onion, garlic, jalapeno, and bell peppers. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  2. Add the chili powder, cumin, paprika, oregano, black pepper, cayenne pepper, and salt. Cook, stirring constantly, for 1 minute. Add the beef broth and bring to a boil.
  3. Add the ground beef and stir to combine. Reduce the heat to low and simmer, stirring occasionally, for 1 hour.
  4. Add the diced tomatoes and green chiles and cook for an additional 30 minutes. Serve hot.
