Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 very ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 2 tablespoons cacao powder
- 1 teaspoon vanilla extract
Directions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin with butter or line with parchment paper liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, mash the bananas with a fork. Stir in the melted butter, sugar, eggs, cacao powder, and vanilla extract, and mix until smooth.
- Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Divide the batter evenly among the prepared muffin cups. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
