Ingredients
- 4 cups dashi stock
- 1/2 cup soy sauce
- 1 tbsp mirin
- 1 tbsp sugar
- 4 mochi rice cakes
- 1 carrot, sliced
- 1 daikon radish, sliced
- 1/2 cup shiitake mushrooms, sliced
- 2 green onions, chopped
Directions
- In a pot, bring dashi stock to a simmer and add soy sauce, mirin, and sugar.
- Add carrot, daikon radish, and shiitake mushrooms to the pot and simmer until vegetables are tender.
- In a separate pot, bring water to a boil and add mochi rice cakes. Cook until mochi is puffy and soft, then drain and set aside.
- Add cooked mochi rice cakes to the soup pot and simmer for an additional 5 minutes.
- Serve zoni hot, garnished with chopped green onions.
