Ingredients
- 2 cups mixed vegetables (peas, carrots, potatoes, etc.)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp curry powder
- 1/2 tsp turmeric
- Salt and pepper to taste
- 1 package of pre-made samosa wrappers
- Oil for frying
Directions
- In a pan, heat oil and sauté the onions, garlic, and ginger until fragrant.
- Add the mixed vegetables and cook until slightly softened.
- Stir in the curry powder, turmeric, salt, and pepper. Cook for another few minutes.
- Let the mixture cool before filling the samosa wrappers.
- Take a samosa wrapper and fold it into a triangle, sealing the edges with a little water.
- Fill the triangle with the vegetable curry mixture and seal the top edge.
- Repeat for the remaining wrappers and mixture.
- Heat oil in a pan and fry the samosas until golden brown and crispy.
- Serve hot with your favorite dipping sauce or chutney.
