Ingredients

  • Cake:
  • - 2 cups all-purpose flour
  • - 1 1/2 teaspoons baking powder
  • - 1/2 teaspoon baking soda
  • - 1/4 teaspoon salt
  • - 1/2 cup unsalted butter, softened
  • - 1 cup granulated sugar
  • - 3 large eggs
  • - 1 cup sour cream
  • - 1 teaspoon vanilla extract
  • - 1/2 cup poppy seeds
  • - 1/4 cup milk
  • Frosting:
  • - 2 cups sour cream
  • - 1 cup powdered sugar
  • - 1 teaspoon vanilla extract
  • - Powdered sugar, for dusting

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, mixing well after each addition.
  5. Stir in the sour cream and vanilla extract until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. In a small bowl, combine the poppy seeds and milk. Stir the mixture into the cake batter until evenly distributed.
  8. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  9. Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  10. Remove from the oven and let the cake cool in the pan for 10 minutes.
  11. Transfer the cake to a wire rack to cool completely.
  12. In a mixing bowl, whisk together the sour cream, powdered sugar, and vanilla extract until smooth.
  13. Once the cake has cooled, spread a layer of the sour cream frosting on top.
  14. Place the second layer of cake on top and frost the sides and top with the remaining frosting.
  15. Dust the top of the cake with powdered sugar.
  16. Slice and serve.
  17. Enjoy!
