Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 3-4 tablespoons cold water
  • 1/2 cup jam of your choice
  • Powdered sugar, for dusting

Directions

  1. In a large mixing bowl, combine the flour, sugar, and salt.
  2. Add in the cold, cubed butter. Using your fingers or a pastry cutter, cut the butter into the flour until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk together the egg yolk and 3 tablespoons of cold water. Gradually add the egg mixture to the flour mixture, stirring until the dough comes together. Add more water if needed, one tablespoon at a time.
  4. Turn the dough out onto a lightly floured surface and knead it gently for a minute to bring it together. Shape the dough into a disc and wrap it in plastic wrap. Refrigerate for 30 minutes.
  5. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  6. On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Using a round cookie cutter, cut out circles that fit your tart molds or muffin tins. Place the circles into the molds and gently press them down to fit the shape.
  7. Spoon about 1 teaspoon of jam into each tart shell, making sure not to overfill.
  8. Using small cookie cutters or a knife, cut out shapes from the remaining dough to create decorative tops for the tarts.
  9. Place the cutout shapes on top of the jam-filled tarts.
  10. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  11. Remove from the oven and let them cool in the molds for a few minutes before transferring to a wire rack to cool completely.
  12. Once cooled, dust with powdered sugar before serving. Enjoy!
