Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 3-4 tablespoons cold water
- 1/2 cup jam of your choice
- Powdered sugar, for dusting
Directions
- In a large mixing bowl, combine the flour, sugar, and salt.
- Add in the cold, cubed butter. Using your fingers or a pastry cutter, cut the butter into the flour until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the egg yolk and 3 tablespoons of cold water. Gradually add the egg mixture to the flour mixture, stirring until the dough comes together. Add more water if needed, one tablespoon at a time.
- Turn the dough out onto a lightly floured surface and knead it gently for a minute to bring it together. Shape the dough into a disc and wrap it in plastic wrap. Refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Using a round cookie cutter, cut out circles that fit your tart molds or muffin tins. Place the circles into the molds and gently press them down to fit the shape.
- Spoon about 1 teaspoon of jam into each tart shell, making sure not to overfill.
- Using small cookie cutters or a knife, cut out shapes from the remaining dough to create decorative tops for the tarts.
- Place the cutout shapes on top of the jam-filled tarts.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
- Remove from the oven and let them cool in the molds for a few minutes before transferring to a wire rack to cool completely.
- Once cooled, dust with powdered sugar before serving. Enjoy!
