Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 pound smoked sausage, sliced
- 1 pound sauerkraut, drained and rinsed
- 4 cups chicken broth
- 2 cups diced potatoes
- 1 teaspoon caraway seeds
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 cup sour cream
- 2 tablespoons chopped fresh parsley, for garnish
Directions
- Turn on the Instant Pot and select the sauté function. Heat the olive oil and sauté the diced onion and minced garlic until they become translucent.
- Add the sliced smoked sausage to the pot and sauté until lightly browned.
- Add the sauerkraut, chicken broth, diced potatoes, caraway seeds, paprika, and black pepper to the pot. Stir well to combine all the ingredients.
- Close the lid of the Instant Pot and set the valve to sealing. Select the soup function and adjust the cooking time to 15 minutes.
