Ingredients

  • 1 lb turkey breast, cooked and shredded
  • 4 cups potatoes, peeled and thinly sliced
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté until caramelized, about 10 minutes. Add minced garlic and cook for another 1-2 minutes. Remove from heat and set aside.
  3. In a medium saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until golden and bubbly. Gradually whisk in heavy cream and chicken broth. Cook, stirring constantly, until the mixture thickens. Remove from heat and stir in grated Parmesan cheese, thyme leaves, salt, and black pepper.
  4. Spread half of the sliced potatoes in an even layer on the bottom of the prepared baking dish. Top with half of the shredded turkey and half of the caramelized onions. Pour half of the cream sauce over the layers.
  5. Repeat the layers with the remaining potatoes, turkey, onions, and cream sauce.
  6. Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 20-25 minutes or until the potatoes are tender and the top is golden brown.
  7. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh thyme leaves, if desired.
  8. Serve hot and enjoy this comforting Turkey Potato and Onion Casserole!
