This recipe combines the savory flavors of tofu and rice with the sweetness of bell peppers for a wholesome and satisfying meal. Perfect for vegetarians and vegans, these stuffed peppers are easy to make and full of protein and nutrients.

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 block of firm tofu, crumbled
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)
  • Chopped fresh cilantro for garnish

Directions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, sauté the onion and garlic until translucent.
  4. Add the crumbled tofu, cooked rice, cumin, paprika, salt, and pepper to the skillet. Mix well.
  5. Stuff the peppers with the tofu and rice mixture and place them in a baking dish.
  6. If using cheese, sprinkle it on top of the stuffed peppers.
  7. Cover the dish with foil and bake for 25-30 minutes, until the peppers are tender.
  8. Garnish with chopped cilantro before serving.
