This Spinach Artichoke Dip Chicken is a creamy and flavorful dish that combines the classic flavors of spinach artichoke dip with tender chicken breasts. It's a quick and easy recipe that can be made in under 30 minutes, perfect for a weeknight dinner. The chicken is cooked in a creamy spinach artichoke sauce, creating a flavorful and moist chicken breast. Serve it with a side of pasta or vegetables for a complete meal.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup frozen spinach, thawed and drained
  • 1 cup artichoke hearts, chopped
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Directions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, combine the spinach, artichoke hearts, mozzarella cheese, Parmesan cheese, mayonnaise, garlic, salt, black pepper, and red pepper flakes (if using). Mix well.
  3. Using a sharp knife, cut a slit in each chicken breast to create a pocket. Stuff each pocket with the spinach artichoke mixture, evenly dividing it among the chicken breasts.
  4. Secure the openings of the chicken breasts with toothpicks to keep the filling inside.
  5. Place the stuffed chicken breasts in the prepared baking dish and sprinkle with additional mozzarella cheese, if desired.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and golden brown.
  7. Remove the toothpicks before serving. Serve the Spinach Artichoke Dip Chicken with your choice of pasta or vegetables.
