Ingredients

  • 2 cups spinach leaves
  • 1 small cauliflower, cut into florets
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnishing

Directions

  1. Heat oil in a pan and add cumin seeds and mustard seeds. Let them crackle.
  2. Add the chopped onions and sauté until golden brown.
  3. Add the ginger-garlic paste and cook for a minute.
  4. Add the pureed tomatoes, turmeric powder, red chili powder, and salt. Mix well and cook for 5 minutes.
  5. Add the cauliflower florets and cook for 8-10 minutes until they are slightly tender.
  6. Add the spinach leaves and cook for another 5 minutes until wilted.
  7. Add the slit green chilies and garam masala. Mix well.
  8. Cover the pan and let it simmer for 5 minutes so that the flavors blend together.
  9. Garnish with fresh coriander leaves.
  10. Serve hot with rotis or rice.
