Ingredients

  • 4 cups spelt flour

  • 1 teaspoon vanilla extract
  • 1 egg white
  • 1 tablespoon sesame seeds (optional)

Directions

  1. In the bread machine pan, combine the spelt flour, white sugar, and salt. Make a well in the center and add the yeast.
  2. In a separate bowl, whisk together the vegetable oil, eggs, warm water, and vanilla extract. Pour the mixture into the well of the bread machine pan.
  3. Select the dough cycle on your bread machine and start it. Let the machine knead and rise the dough for about 1 to 1 1/2 hours, or until doubled in size.
  4. Once the dough has risen, remove it from the bread machine pan and place it on a lightly floured surface. Punch down the dough to release any air bubbles.
  5. Divide the dough into three equal parts. Roll each part into a long rope, about 16 inches long. Braid the ropes together to form a challah loaf.
  6. Place the challah loaf on a baking sheet lined with parchment paper. Cover it with a clean kitchen towel and let it rise for another 30 minutes.
  7. Preheat the oven to 375°F (190°C).
