  • 1 tablespoon oyster sauce

  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped scallions
  • Lime wedges, for serving

Directions

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and red chile slices. Stir-fry for 1 minute until fragrant.
  3. Add the sliced shiitake mushrooms to the skillet and cook for 3-4 minutes until they start to brown.
