These Prosciutto Wrapped Stuffed Potato Bites are a perfect appetizer or party snack. The tender baby potatoes are filled with a creamy and flavorful filling, wrapped in crispy prosciutto, and baked until golden and delicious. With a combination of savory prosciutto, creamy filling, and crispy potatoes, these bites will be a hit at any gathering. They are incredibly easy to make and can be prepared ahead of time, making them a convenient option for entertaining. Serve them warm and watch them disappear!

Ingredients

  • 1 pound baby potatoes
  • 4 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh chives
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 thin slices of prosciutto

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Bring a large pot of salted water to a boil. Add the baby potatoes and cook until fork-tender, about 15 minutes. Drain and let cool slightly.
  3. While the potatoes are cooking, in a medium bowl, combine the softened cream cheese, grated Parmesan cheese, minced garlic, chopped fresh chives, salt, and black pepper. Mix well to combine.
  4. When the potatoes are cool enough to handle, cut a small slice off the top of each potato. Using a melon baller or a spoon, carefully scoop out the centers, leaving a small rim of potato around the edge. Reserve the potato flesh for another use.
  5. Fill each hollowed-out potato with the cream cheese mixture, pressing it in gently. Wrap each stuffed potato with a slice of prosciutto, making sure to cover the filling completely.
  6. Place the prosciutto-wrapped potatoes on a baking sheet lined with parchment paper. Bake in the preheated oven for 10-15 minutes, or until the prosciutto is crispy and the filling is heated through.
  7. Remove from the oven and let cool for a few minutes before serving. Garnish with additional chopped chives, if desired.
  8. Serve warm and enjoy!
