Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 large sweet potatoes, peeled and cubed

  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 2 cups chopped kale
  • 1 cup coconut milk

Directions

  1. Turn on the Instant Pot and select the sauté function. Heat the olive oil and sauté the onion and garlic until they are soft and translucent.
  2. Add the sweet potatoes, carrots, vegetable broth, thyme, cumin, salt, and pepper to the Instant Pot. Stir well to combine.
  3. Close the Instant Pot and set the pressure valve to the sealing position. Select the manual/pressure cook function and set the timer for 10 minutes.
  4. Once the cooking time is up, allow the pressure to release naturally for 5 minutes. Then, carefully perform a quick release to release any remaining pressure.
  5. Open the Instant Pot and stir in the chopped kale and coconut milk. Select the sauté function and cook for another 5 minutes, or until the kale is wilted.
  6. Turn off the Instant Pot and let the soup cool for a few minutes before serving. Serve hot with a garnish of fresh herbs, if desired.
