Ingredients

  • 8 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 thumb-sized piece of ginger, thinly sliced
  • 2 star anise
  • 2 cinnamon sticks
  • 4 whole cloves
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 4 ounces rice noodles, cooked according to package instructions
  • 1 cup bean sprouts
  • 1 cup sliced mushrooms
  • 1 cup thinly sliced carrots
  • 1 cup thinly sliced bok choy
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves
  • 1/4 cup green onions, sliced
  • 1 lime, cut into wedges
  • Sriracha sauce, for serving

Directions

  1. In a large pot, combine the vegetable broth, garlic, ginger, star anise, cinnamon sticks, cloves, soy sauce, and hoisin sauce. Bring to a boil.
  2. Reduce the heat and let simmer for 15-20 minutes to allow the spices to infuse the broth.
  3. Strain the broth to remove the solids and return the clear broth to the pot.
  4. Divide the cooked rice noodles among four bowls.
  5. Top the noodles with bean sprouts, mushrooms, carrots, and bok choy.
  6. Pour the hot broth over the vegetables and noodles in each bowl.
  7. Garnish with cilantro, mint leaves, green onions, and a squeeze of lime juice.
  8. Serve hot with sriracha sauce on the side.
