- 1 cup currants
- 1 cup sultanas
- 1/2 cup chopped candied peel
- 1/2 cup chopped dried apricots
- 1/2 cup chopped prunes
- 1/4 cup brandy
- 1 orange, zest and juice
- 1 lemon, zest and juice
- 1 cup all-purpose flour
- 1 cup breadcrumbs
- 1/2 cup brown sugar
- 1/2 cup shredded suet
- 1/2 cup chopped almonds
- 1 tsp mixed spice
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 2 eggs, beaten
- 1/4 cup milk
- Butter or oil, for greasing the pudding basin
Directions
- In a large mixing bowl, combine the raisins, currants, sultanas, candied peel, dried apricots, and prunes.
- Pour the brandy over the fruit mixture and add the orange and lemon zest and juice. Stir well to combine.
- Cover the bowl with a clean cloth and let the fruit mixture soak overnight.
- The next day, grease a 2-pint pudding basin with butter or oil.
- In another bowl, mix together the flour, breadcrumbs, brown sugar, suet, chopped almonds, mixed spice, ground cinnamon, ground nutmeg, and salt.
- Add the soaked fruit mixture to the dry ingredients and mix well.
- In a separate small bowl, whisk together the beaten eggs and milk. Pour it over the fruit mixture and stir until everything is well combined.
- Transfer the pudding mixture into the greased pudding basin.
- Cover the basin with a double layer of greased parchment paper or aluminum foil. Secure it tightly with kitchen twine.
- Place the pudding basin in a large pot and pour boiling water into the pot until it reaches about halfway up the sides of the basin.
- Cover the pot with a lid and steam the pudding on low heat for 3 hours, adding more boiling water if needed.
