Ingredients

  • 1 orange, zest and juice
  • 1 lemon, zest and juice
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
  • 1/2 cup brown sugar
  • 1/2 cup shredded suet
  • 1/2 cup chopped almonds
  • 1 tsp mixed spice
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 eggs, beaten
  • 1/4 cup milk
  • Butter or oil, for greasing the pudding basin

Directions

  1. In a large mixing bowl, combine the raisins, currants, sultanas, candied peel, dried apricots, and prunes.
  2. Pour the brandy over the fruit mixture and add the orange and lemon zest and juice. Stir well to combine.
  3. Cover the bowl with a clean cloth and let the fruit mixture soak overnight.
  4. The next day, grease a 2-pint pudding basin with butter or oil.
  5. In another bowl, mix together the flour, breadcrumbs, brown sugar, suet, chopped almonds, mixed spice, ground cinnamon, ground nutmeg, and salt.
  6. Add the soaked fruit mixture to the dry ingredients and mix well.
  7. In a separate small bowl, whisk together the beaten eggs and milk. Pour it over the fruit mixture and stir until everything is well combined.
  8. Transfer the pudding mixture into the greased pudding basin.
  9. Cover the basin with a double layer of greased parchment paper or aluminum foil. Secure it tightly with kitchen twine.
  10. Place the pudding basin in a large pot and pour boiling water into the pot until it reaches about halfway up the sides of the basin.
  11. Cover the pot with a lid and steam the pudding on low heat for 3 hours, adding more boiling water if needed.
  12. Once the pudding is steamed, remove it from the pot and let it cool slightly before carefully turning it out onto a serving plate.
  13. Serve the steamed Christmas pudding warm with brandy butter or custard.
