Ingredients

  • 6 large tomatoes
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the tops off the tomatoes and scoop out the pulp and seeds, leaving just the tomato shells. Reserve the pulp for later.
  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  4. Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent.
  5. In a large bowl, combine the cooked ground beef, cooked rice, grated Parmesan cheese, chopped fresh parsley, dried oregano, dried basil, salt, and pepper. Mix well.
  6. Fill each tomato shell with the beef and rice mixture. Place the stuffed tomatoes in a baking dish.
  7. In a blender or food processor, blend the reserved tomato pulp until smooth. Pour the tomato puree over the stuffed tomatoes.
  8. Sprinkle breadcrumbs over the top of each stuffed tomato.
  9. Bake in the preheated oven for 30 minutes or until the tomatoes are tender and the filling is heated through.
