Ingredients
- 1 pork tenderloin (about 1.5 pounds)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 2 tablespoons olive oil
- 1/2 cup pepper jelly
- 1/4 cup crumbled gorgonzola cheese
Directions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the salt, black pepper, garlic powder, paprika, and cayenne pepper.
- Season the pork tenderloin with the spice mixture, rubbing it all over the meat.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the pork tenderloin to the skillet and sear it on all sides until browned, about 2-3 minutes per side.
- Transfer the skillet to the preheated oven and roast the tenderloin for 20-25 minutes, or until it reaches an internal temperature of 145°F (63°C).
- While the pork is roasting, heat the pepper jelly in a small saucepan over low heat until melted and smooth.
- Once the tenderloin is done cooking, remove it from the oven and let it rest for 5 minutes.
- Brush the melted pepper jelly over the top of the tenderloin, using a pastry brush to evenly coat it.
- Sprinkle the crumbled gorgonzola cheese over the glazed pork tenderloin.
- Slice the tenderloin into medallions and serve immediately, drizzling any extra glaze over the top.
