Ingredients

  • 4 lbs pork shoulder
  • 1 cup ginger beer
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper, to taste

Directions

  1. Preheat your oven to 325 degrees Fahrenheit.
  2. In a bowl, whisk together the ginger beer, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, chili powder, cayenne pepper, salt, and pepper.
  3. Place the pork shoulder in a large dutch oven or oven-safe pot and pour the ginger beer mixture over it.
  4. Cover the pot with a lid and transfer it to the preheated oven.
  5. Cook the pork for about 3 hours, or until it is fork-tender and easily pulls apart.
  6. Once the pork is cooked, remove it from the pot and transfer it to a cutting board. Use two forks to shred the meat.
  7. Meanwhile, place the pot with the cooking liquid on the stovetop over medium-high heat. Bring the liquid to a boil and let it simmer until it reduces and thickens slightly, about 10-15 minutes.
  8. Pour the reduced cooking liquid over the shredded pork and toss to coat.
  9. Serve the sweet and spicy ginger beer pulled pork on buns with some coleslaw or as a main course with roasted vegetables. Enjoy!
