Delicious Loaded Potato Skins Recipe

These loaded potato skins are the perfect appetizer or snack for any party or gathering. They are crispy on the outside, soft on the inside, and topped with gooey cheese, crispy bacon, and fresh green onions. The combination of flavors and textures is absolutely amazing!

Ingredients

  • 4 large russet potatoes
  • olive oil
  • salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 4 slices of bacon, cooked and crumbled
  • 2 green onions, thinly sliced

Directions

  1. Preheat the oven to 400°F
  2. Scrub the potatoes and pierce them with a fork. Rub them with olive oil, salt, and pepper
  3. Bake the potatoes for about 45 minutes, or until they are cooked through and the skin is crispy
  4. Let the potatoes cool slightly, then cut them in half and scoop out the flesh, leaving a thin layer of potato on the skins
  5. Brush the inside and outside of the potato skins with olive oil and place them back in the oven for 10 minutes
  6. Fill each potato skin with cheddar cheese and bacon, then bake for an additional 10 minutes until the cheese is melted and bubbly
  7. Top with sliced green onions before serving
