Ingredients

  • 2 large oranges
  • 2 large lemons
  • 4 cups water
  • 4 cups granulated sugar

Directions

  1. Wash the oranges and lemons thoroughly to remove any wax or dirt.
  2. Cut off the ends of the oranges and lemons, then score the peels into quarters.
  3. Gently remove the peels by carefully running a knife along the inside of each quarter.
  4. Slice the peel into thin strips, about 1/4 inch wide.
  5. In a large saucepan, bring the water to a boil.
  6. Add the citrus peels to the boiling water and let them simmer for about 5 minutes.
  7. Drain the peels and rinse them under cold water to remove any bitterness.
  8. Repeat steps 6 and 7 two more times to blanch the peels and remove any remaining bitterness.
  9. In the same saucepan, combine the sugar and 2 cups of water.
  10. Stir the mixture over medium heat until the sugar dissolves completely.
  11. Add the blanched peels to the sugar syrup and simmer them gently for about 1 hour or until the peels become translucent.
  12. Remove the saucepan from heat and let the peels cool in the syrup for 30 minutes.
  13. Carefully remove the candied peels from the syrup using a slotted spoon and transfer them onto a wire rack.
  14. Let the peels dry for 24 hours until they become slightly tacky and not overly sticky.
  15. Store the candied peels in an airtight container at room temperature for up to 2 weeks.
