Ingredients

  • 4 chicken breasts, boneless and skinless
  • 8 slices of bacon
  • 12 asparagus spears
  • 4 ounces goat cheese, crumbled
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Place the chicken breasts on a cutting board and make a slit in the side of each breast to form a pocket.
  3. Season the inside of the chicken breasts with salt and pepper.
  4. Wrap 2 slices of bacon tightly around each asparagus spear.
  5. Stuff 3 bacon-wrapped asparagus spears and some crumbled goat cheese into each chicken breast pocket.
  6. Secure the opening of the pocket with toothpicks to hold the filling in place.
  7. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  8. Add the stuffed chicken breasts to the skillet and cook for 5 minutes on each side, or until browned.
  9. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the bacon is crispy.
  10. Remove the toothpicks before serving.
