Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups apricot jam

Directions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  3. Add the cubed butter to the flour mixture. Using a pastry cutter or your hands, cut the butter into the flour until the mixture resembles coarse crumbs.
  4. In a small bowl, whisk together the egg and vanilla extract. Pour the egg mixture into the flour mixture and stir until a dough forms.
  5. Take 2/3 of the dough and press it evenly into the bottom of the prepared baking dish. Set aside the remaining dough for the crumb topping.
  6. Spread the apricot jam over the dough in the baking dish, ensuring it is evenly distributed.
  7. Crumble the reserved dough over the top of the apricot jam layer, creating a crumbly topping.
  8. Bake in the preheated oven for 35-40 minutes, or until the edges are golden brown and the jam is slightly bubbly.
  9. Remove from the oven and let it cool completely in the baking dish before cutting into bars.
  10. Serve and enjoy these delicious homemade apricot bars!
