- 1 teaspoon Dijon mustard
- ½ teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup breadcrumbs
- 2 tablespoons melted butter
Directions
- Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions. Drain and set aside.
- Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- In a large skillet, heat the olive oil over medium heat. Add the diced ham and cook until lightly browned, about 5 minutes. Remove from the skillet and set aside.

- Add the broccoli florets and frozen peas to the skillet. Cook for another 5 minutes until the vegetables are tender. Remove from heat.
- In a medium saucepan, whisk together the milk, all-purpose flour, Dijon mustard, dried thyme, salt, and black pepper. Cook over medium heat, stirring constantly, until the sauce thickens, about 5 minutes.
- Add 1 cup of shredded cheddar cheese to the sauce and stir until melted and smooth.
- In a large mixing bowl, combine the cooked egg noodles, diced ham, sautéed vegetables, and cheese sauce. Mix well to coat everything.
- Transfer the mixture to the greased baking dish and spread it evenly.
- In a small bowl, combine the breadcrumbs and melted butter. Sprinkle the breadcrumb mixture over the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is heated through.
- Remove from the oven, let it cool for a few minutes, and serve hot.
