- 3 pounds beef roast
- 2 tablespoons olive oil
- 2 onions, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup chopped green chilies
- 1 tablespoon cumin powder
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon oregano
- 1/4 teaspoon cayenne pepper
- 1/4 cup fresh cilantro, chopped
Directions
- Preheat your oven to 325°F (160°C).
- In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.
